The Old Dairy

Proudly the first distillery on the Mid North Coast of NSW.

Every spirit is crafted on-site in true small-batch fashion, honouring the old-school unhurried craft of distilling. We live by a genuine grain-to-glass (and farm-to-glass) philosophy — milling local NSW grains, mashing and fermenting our own wash, then distilling every drop ourselves.

On the banks of the Maria River, on the Mid North Coast of New South Wales, stands a small family farm and an old dairy. Our family first settled this country in the 1830s. In 2000 we were able to purchase the farm and bring it back into the family.

Growing Botanicals

AROMATICS & HERBS

We grow what we can—juniper, coriander, citrus, and native Australian botanicals. What we can’t grow, we source as locally as possible: sugar and molasses, barley, rye, wheat, and corn. A handful of botanicals come from further afield, always chosen with care.
